Method 1: The 3-Compartment Sink System (HACCP Compliant)
Sink 1 (Wash): Scrape off food residues. Fill the basin with warm water (45°C to 50°C). Add 35 ml to 45 ml per 20 litres of water. Wash dishes using a brush or pad.
Sink 2 (Rinse): Submerge washed items in clean, hot running water to completely remove all surfactant residues.
Sink 3 (Sanitise): Immerse items in an approved chemical sanitiser or hot water sanitising bath (77°C) for the legally required contact time.
Drying: Place items on a clean, sanitised rack to air-dry completely. Do not wipe with towels to avoid cross-contamination.
